[Thoughts]

The 2024 vintage is our second winemaking venture.

Now in their fourth year, the grapes are growing well without any major damage from pests or diseases.

This year, we were blessed with generally good weather throughout the season, and we were able to once again produce healthy, satisfying grapes for Yamazaki Winery to ferment, producing an amazing 950 bottles of wine.

Thank you very much to everyone who helped with the harvest and preparation.

I am confident about this year's wine. (Last year was the first time and it was a small amount.)

It's delicious to drink straight away, but Yamazaki Winery told us that it tastes even better if it's left to sit for a while.

The name of the wine is "DOG WOOD", just like last year, which is the Japanese name for the flower "Hanamizuki".

The flower's meaning is "reciprocation" and "permanence."

Throughout my life, I have been able to get to where I am today thanks to the support of countless people.

We chose this name because we wanted this feeling of gratitude to be conveyed through this wine.

I also hope that in the future we will be able to build accommodation facilities so that many people will come to this area and that this relationship will continue for a long time.

[Becoming wine]

The Pinot Noir and Pinot Gris were harvested on September 30th, sorted on a vibration table, and then cold soaked for a week (kept cool to prevent fermentation).

The Sauvignon Blanc was harvested on October 6th, and the juice was pressed together with the cold-soaked grapes, and then fermented to make wine.

[Taste]

This is a dry rosé wine with a pale pink color, influenced by the color of Pinot Noir skins.

This wine has a gorgeous and mellow aroma, but is also refreshingly dry and full-bodied, making it easy to pair with any type of meal.

If you don't have a wine cellar, you can store it in the refrigerator, but make sure to store it in a cool, dark place, not in a warm place.

    [Brewing process]

    The Pinot Noir and Pinot Gris are cold soaked for a week, and the Sauvignon Blanc is pressed together after harvest. Fermentation is done in a stainless steel tank using wild yeast. After fermentation, the wine is stripped of its sediment. Lactic acid bacteria are added to the stainless steel tank for MLF. After stripping of the sediment, bentonite is added for clarification. After stripping of the sediment, the wine is filtered and bottled. The necessary amount of sulfurous acid is added during brewing.
