[Thoughts]

This is a memorable first vintage for us.

It's been seven years since I came to Mikasa. It's been a long time.

The grapes were planted in 2021 and endured bad weather such as extreme heat and drought, as well as damage from pests such as deer and rabbits, but managed to make it to the harvest stage, and Yamazaki Winery commissioned them to brew these grapes, which are like our own children.

We named the wine "DOG WOOD."

This is the Japanese name for the flower "dogwood."

The flower's meaning is "reciprocation" and "permanence."

Throughout my life, I have been able to get to where I am today thanks to the support of countless people.

We chose this name because we wanted this feeling of gratitude to be conveyed through this wine.

I also hope that in the future we will be able to build accommodation facilities so that many people will come to this area and that this relationship will continue for a long time.

[Becoming wine]

The Sauvignon Blanc and Pinot Gris were harvested on September 24th and sorted on a vibration table (a brewing device in which the grapes are poured onto a highly vibrating table to remove insects and debris), after which they were crushed in stainless steel tanks (convenient containers that do not rust) and left for skin contact overnight (the juice released from the crushed grapes is soaked with the skins and seeds to transfer the aromatic components to the juice).

The following day, the Pinot Noir was harvested, pressed along with the grapes that had been in skin contact, and the juice was fermented.

Because of the small harvest, we were not able to achieve everything we wanted in terms of winemaking.

I wanted to bottle it in a perfectly clean state (meaning crystal clear), but there was still a little bit of sediment left.

[Taste]

This rosé wine has a refreshing, dry finish that makes it suitable for meals, and has a pale pink color with a slight hint of Pinot Noir skin.

Do not store in a warm place; if you don't have a wine cellar, you can store it in the refrigerator, so keep it chilled.

I think it tastes better when you drink it a little chilled.

    [Brewing process]

    The Sauvignon Blanc and Pinot Gris are left in skin contact overnight, and the Pinot Noir is pressed together after harvest. 50ppm of sulfurous acid is added to the juice. After the yeast is created and added, the juice is naturally fermented in a stainless steel tank. After fermentation, the sediment is removed. Before bottling, only the supernatant is collected and 20ppm of sulfurous acid is added before bottling.
